There I was browsing around looking for a design for a manual ice cream
maker when lo and behold I stumble on to your liquid nitrogen page.

So now of course I have questions.

I needed an ice cream machine because my neices are allergic to many
artificial food additives so over the years we have evolved a philosophy
of make it your self or don't eat it. The whole family has become much
more healthy on this diet.

I wished a handmade versus an electric ice cream maker because. I'm
stingy, don't want to waste electricity on a chore I can get the girls
to do with the ice cream as a reward. Teaches them effort=reward.

Don't like to have too many electric gadgets anyway. Old fashioned
implements can be more fun.

With no background in science. Here are my questions

If I use your receipe will I poison anyone?
what happens to the nitrogen that boils off? Is there any problem with
inhaling it?
Do you pour the liquid nitrogen into the ice cream mixture itself? Or
into the sink around the bowl?
how large a bowl do I need to use for one gallon of ice cream. Six
gallons?
Where do I get heavy gloves? I live in the West Indies. Will rubber
gloves help or are you talking about like things people up north wear in
the winter.
I can probabblly find these answers so you don't have to ans. unless you
have time and energy.
Your page and your idea are terrific. Thanks for sharing them. Would
you like a receipe for rose petal icecream. I have one for rose petal
jam. If you can make them into jam you can make them into ice cream

I read your article about making Ice cream using liquid nitrogen. You
did a pretty good job. Did you know there is a product made basically
that way. I worked in the only factory that makes it for 3 years in
Paducah, KY. The product is called Dippin' Dots it was invented by a
microbiologist in Louisville KY. the ice cream instead of throwing it
all in there at once is dripped in. It freezes so fast that it forms
dots about the size of BB's. Since it is froze so fast it has a real
creamy taste. It now being sold worldwide mainly at Adventure parks like
Disneyland, because it is more expensive than regular ice cream.

Your warning about the nitro. is pretty accurate, but nitro will burn
you if it just sits on you and isn't underpressure. It will burn you
like fire and cause yellow blisters to form. I don't think Dippin' Dots
has a homepage yet if you are interested in more info. Here are some
interest stats from working their. They go through about 10,000 gallons
of nitro a day making about 5000 gallons of ice cream. Nitro is a -360
degrees . To keep your ice cream frozen after you make it get a block
of dry ice and set it on top of it in your freezer. Most ice cream
frozen with nitro needs to stay at least -30 below to stay frozen.

You said you didn't know about artificial flavors and their reactins to
the nitro. They will not react at all with the nitrogen. dippin dots
makes about 15 flavors with all artificial flavoring . You might try
something they called rainbow ice. To make it get some corn syrup,
water and artificial flavoring.

The Ice Cream sounds coooooool! One question..does the liquid nitrogen
get pured directly into the pan or in the sink? You mentioned that you
use 5 to 1 liquid nitro to ice cream produced! 6 gal of stuff is alot to put in that pan or a pressure cooker...does the liquid nitro
evaporate as it is poured or something...I want to try this but don't
want to kill the family!!!!!!

one question. Your instructions don't quite make it clear if you're
supposed to pour the liquid nitrogen into the sink so the bowl is immersed
in it (which is kind of what I expected) or into the bowl with the
ingredients (which is kind of what the pictures make it look like).

Checked with our only supplier of liquid nitrogen cost about $20.00 local
money about US$10.00 per gal.

5 gals = $100.00 not worth it.That's what happens if you live on a
flyspeck in the middle of the Atlantic. But the climate is great.

Looking for an old fashioned hand crank ice cream maker. I need the
exercise anyway.

Rose petal ice cream rec. lost under Christmas confusion. I will dig it
out in the new year before the roses bloom.

I'm just a little worried about the ease in which the safety factors
were discussed....

Liquid nitrogen can be very dangerous to those who are not familiar with
the handling
procedures. For example, it forceably displaces oxygen which could cause
asphyxiation. Also, the way that was described "it will boil in your
hand" could lead the uninformed to believe that it is a thing to play
with, which it is not.....

This comment is meant to protect those who are unaware... I spent 5
years in the USMC Cryogenics field, so please heed my warning..

I too am an ice cream lover, but I found your page while looking to
find out if I could get liquid nitrogen in small quantities. Judging by
the pictures on your web pages, I'd say you were able to obtain a
relatively small quantity. So....If I may ask, where did you get it? If
you could let me know, I'd greatly appreciate it. A colleague of mine
and I were discussing this past weekend some experiments that we would
like to try using liquid nitrogen to stress relieve metals. We had heard
of this being done before, and decided we would like to learn a little
